Unripe avocados ripen at room temperature, faster in a paper bag with an apple. When one gives slightly under your thumb, move it to the fridge. A cut half keeps until the next day if you leave the stone in, brush it with lemon juice and cover it.
How to tell if avocados have gone off
These are guide values for food that has been stored properly. Check how it looks, smells and feels: mould, a sour or unusual smell or a slimy surface mean it should go in the bin. Eat raw meat and fish strictly within these times, and never after the use-by date.
