Leave mushrooms unwashed in their punnet or a paper bag in the fridge, never in a sealed plastic bag or tub. Once they turn soft, slimy or dark in patches, or smell musty, they have gone off. Clean and slice them, then fry or blanch them briefly before freezing.
How to tell if mushrooms have gone off
These are guide values for food that has been stored properly. Check how it looks, smells and feels: mould, a sour or unusual smell or a slimy surface mean it should go in the bin. Eat raw meat and fish strictly within these times, and never after the use-by date.
