Shelf life of Parmesan at a glance
| Storage | Unopened | Opened |
|---|---|---|
| Fridge | 6 months | 3 weeks |
| Freezer | 6 months | – |
Wrap an opened piece in cheese paper or keep it in a cheese box in the fridge, rather than sealing it airtight in cling film. A small spot of mould on hard cheese can be cut away generously, but several spots, or cheese that has gone moist and soft, mean it should be thrown away. Ready-grated Parmesan does not keep as long once opened.
Does Parmesan go off?
These are guide values for food that has been stored properly. Food past its best before date has not necessarily gone off, and many products are still fine after it. Look at it, smell it and taste a little before deciding. Mould, an unusual smell or a bulging tin mean it should go in the bin. A use-by date is different: do not eat the food after that date.
