Leave spinach unwashed in its bag, or wrap it loosely in a damp cloth, and keep it in the salad drawer. Wash it just before cooking and pick out any wilted, yellow or slimy leaves. Cooked spinach should be covered, chilled and eaten within a day.
How to tell if spinach has gone off
