Keep mushrooms unwashed in their original container or a paper bag in the fridge, never in a sealed plastic bag or tub. Soft, slimy or dark patches and a musty smell mean they have gone bad. To freeze, clean and slice them, then saute or blanch them briefly first.

How to tell if mushrooms have gone bad

The times on this page are guideline values for food stored properly. Check how it looks, smells and feels: mold, slime, an off smell or mushy spots mean it goes in the trash. Eat raw meat and fish strictly within these times, and never past a "Use By" date.
