Keep salmon at 40 °F (4 °C) or below in the coldest part of the fridge and cook it the day you buy it or the next day. Fresh salmon smells mildly of the sea and has firm, glossy flesh; once it smells fishy or sour, it has spoiled. As an oily fish it keeps for less time in the freezer than white fish, and smoked salmon lasts about a week in the fridge.
How to tell if salmon has gone bad
The times on this page are guideline values for food stored properly. Check how it looks, smells and feels: mold, slime, an off smell or mushy spots mean it goes in the trash. Eat raw meat and fish strictly within these times, and never past a "Use By" date.
